• This approach to world cultures through food could have been a major breakthrough for its intended middle-school audience. It has many of the right ingredients, especially its established Junior Worldmark format, where alphabetized country entries are divided into standard subsections covering geography; history; foods (including those of different culture groups); religious and holiday celebrations; mealtime customs; politics, economics, and nutrition; and both print and Web-based resources for further study. The 70 articles cover nations and culture groups worldwide and offer more than 700 recipes for both traditional and modern dishes. Introductory material addresses basic safety and health issues, defines cooking terminology and procedures, and lists ingredients, with suggestions on how to locate more exotic goods. Unfortunately, the set has several drawbacks. The most noticeable is the lack of color photographs or graphic enhancement. Murky black-and-white pictures accompany the recipes, creating tableaus that are particularly unappetizing. The photos are so grainy that even shots meant to instruct or demonstrate are useless. The recipes themselves are serviceable but unexciting.

• Compiled mostly by academics, the succinctly written articles contain much current information, some of it dating from as recently as August 2000. The volume on leaders is especially useful, providing hard-to-find biographical information on lesser-known heads of state. These profiles, mostly written or updated in 2000, have been culled from a variety of print and web sources. The volume on the United Nations is a superb ready reference, describing the history and structure of U.N. agencies and including useful comparative statistical tables. A very minor quibble: the country volumes do not contain signed entries. Still, this set is an outstanding source providing reliable, comprehensive, and easily accessible information for frequently asked reference questions.

• This outstanding work is prepared by scholars for serious students of the archaeology of ancient Egypt. Egyptologists, philologists, historians, classicists, art historians, and anthropologically trained archaeologists helped write it. Margaret Bunson's Encyclopedia of Ancient Egypt (Facts On File, 1991) is much more accessible and more reasonably priced for public, middle-school, high-school, and college undergraduate libraries. Her black-and-white illustrations are strong and definitions are brief and clear for term-paper purposes. There are entries for such familiar topics as Nefertiti and Tuthmose (spelling used by Bard), which are accessible in Bard only through the index as part of more complex, but thorough, discussions. Bard's work, however, is well worth the cost and belongs in all college and university libraries and other libraries supporting research in ancient archaeology.

• This guide to endangered species worldwide is highly selective, describing 700 animals and plants of the many thousands that are threatened with extinction. The species have been selected from lists compiled by the U.S. Fish and Wildlife Service, the Convention on International Trade in Endangered Species (CITES), and IUCN-the World Conservation Union. Animal entries are arranged by species and then by family and genus; there is a separate section for plants. Entries are listed by common name, followed by scientific name. A shaded box contains phylum, class, order, and family; the status of the animal or plant on the lists of any of the three organizations; and geographic range. Essays provide a physical description, breeding and habitat information, and conservation efforts and survival outlook for the species. These entries are one to two pages in length. A small black-and-white photograph is provided for about half the entries; some of these photographs have been too tightly cropped, cutting off the animal's horns or its tail. Supplementary material consists of lists of extinct species and of wildlife and conservation organizations, a bibliography arranged by species, and a series of simple black-and-white maps of regions of the world. The geographic index shows that there is good representation of animals from all parts of the world. American species are listed both under U.S.A. and specific states. The index lists both popular and scientific names.
